Excellent with meats, even when glazed or marinated. Perfect with foie gras.
Appearance:
The Colombara vineyard is over 30 years old and is entirely terraced. It is situated in Oliosi, a small hamlet in Castelnuovo del Garda, south-east of Lake Garda. Vinification: The grapes are crushed and de-stemmed, then immediately cooled to undergo a brief cold maceration on the skins. The must is then left to settle to eliminate any substantial matter in suspension, prior to temperature-controlled fermentation. After bottling the wine remains in bottle for at least 10 months before being released for sale.
Tasting Notes:
Color: very lively and bright golden yellow with brilliant pale yellow notes. Nose: Rich, rounded notes of ripe apricots and yellow plums are accompanied by refined hints of chamomile flowers, hawthorn blossoms and acacia flowers. Flavor: Well-balanced and harmonious; the savory, concentrated fruit comes immediately to the fore thanks to its impressive structure.
