Soave is a famously large, white wine DOC in the Veneto and is located to the north and east of the city of Verona. It gets its name from the Suevians, a German tribe who arrived in Italy along with the Lombards during the Dark Ages. Its Garganega-based wines leapt to prominence in 1968 with the creation of the Soave DOC, spurred on by a massive co-operative industry. Soave Classico covers the original hillside zones around the communes of Soave and Monteforte, while a new hillside catch-all sub-zone, Colli Scaligeri, has also been created for those just outside the Classico area. VINIFICATION: cold maceration for 24 hours at 10-12°C, depending on the ripeness of the fruit, soft pressing; fermentation in stainless steel tanks at a controlled temperature of between 16° and 18°C, with autochthony raising agents. We store the wine in steel tank until March and in April we bottle the wine. The wine is ready from 60 days after the bottled, but the best characteristics are after 80 days. Is possible to store the wine after the selling time for 3 years, in the best vintages for 5 years.
