GRAPE VARIETY: Sangiovese 100%
VINIFICATION:Alcoholic fermentation with maceration of the skins (18-20 days) at a controlled temperature and spontaneous malolactic fermentation, both in truncated cone-shaped Slavonian oak vats.
REFINEMENT: In 20 to 32 hl Slavonian oak barrels for 6-10 months; followed by bottle refinement of at least 3-4 months.
ON SALE BY: 15-18 months from harvest.
NOTE:
Color: intense ruby.
Bouquet: fresh, with notes of red fruit and vanilla.
Taste: good structure, slightly tannic, persistent.
Food pairings: pasta with meat sauce, roasted white and red meats, mushrooms, cured meats and cheeses.
