GRAPE VARIETY: Merlot 60% – Sangiovese 40%
VINIFICATION:Alcoholic fermentation – separated by variety – with maceration of the skins (approx. 20-25 days) at a controlled temperature in stainless steel tanks; spontaneous malolactic fermentation.
REFINEMENT:In oak barrels of 20 to 32 hl for at least 6-8 months; followed by a few months of bottle refinement.
ON SALE BY:12-15 months from the harvest.
NOTE:
Color: intense ruby, very deep.
Bouquet: intense, of ripe red fruits and liquorice.
Taste: excellent structure, quite soft, well balanced.
Food pairings: roasted red and white meats, cured meats and medium-aged cheeses.
